Tender Chipotle Rubbed Pork Roast

We celebrated the August and September birthdays in my fam on Friday night! There was a HUGE spread to make tacos, burritos and salads! And one of the essential components of that meal, not to mention the biggest hit as well was the chipotle rubbed pork! It turned out so flavorful and tender! It was Melt.In.Your.Mouth good!
For the roast:
I used a roughly 4 lb spoon roast(pork tenderloin or shoulder would be awesome too!)
Brown all sides and ends in a large fry pan, then put in a crockpot and sprinkle w/ kosher salt.
In a medium bowl mix together:
1 1/2 cups good quality apple juice(Martinelli's, Simply Apple Juice)
2 teaspoons hickory liquid smoke
2 tablespoons Worsteshire sauce
Pour the apple juice mix over the roast in the crockpot.
Spread 2 tablespoons of chipotle paste on top of the roast.(chipotle paste can be easily made by taking canned chipotle peppers in adobo sauce and blending them to a paste in a blender.)
Set the crockpot temp to low and slow cook for 8 hours.
Once pork is cooked, cut off any excess fat and shred the meat using two forks.
Use the perfectly cooked and shredded pork in burritos, tacos and salads like we did or one of my personal favorites pulled pork sandwiches. I like to use a good hearty hamburger bun(slightly toasted) and a little high quality bbque sauce for the sandwiches. MMM, MMM, GOOD!!!!
