Momma's Hot Chocolate

This hot chocolate recipe trumps all others in my opinion! It is the cocoa that Bri, myself and the rest of our siblings grew up on! It's such an easy recipe, so put the swiss miss away my friends and try it! I made it on our first real snowfall day and it really hit the spot!:)
1/2 gallon whole milk
2 cans evaporated milk
1/4-1/2 cup dry, unsweetened cocoa(to your tastes)
1/2-1 cup granulated sugar(to your tastes)
First start warming the milk and evaporated milk over medium heat, stirring occasionally so the bottom doesn't burn. Then add the cocoa powder and stir well to dissolve. Add the sugar last and to your tastes. Heat through until nice and steamy hot!
Whip a pint of heavy cream just until you have stiff peaks. Add 2-3 tablespoons of granulated sugar and whip just until incorporated. Serve hot chocolate with a generous helping of the fresh, lightly sweetened whipped cream!

I have learned to incorporate the cocoa (I like Hersheys) with the sugar as this helps break up any lumps in the cocoa. I also add just a pinch of salt and about a tsp. of vanilla. If you like more of a European style cocoa, add more cocoa powder and less sugar. For really decadent hot chocolate substitute some half and half for one of the cans of evap milk. As you can see this is not an exact "science," but you get the idea. It's all about having fun in the kitchen and experimenting to your tastes. What's not to love about that huge dollop of fresh whipped cream. YUM. Kristie, you're right, the pictures are great and the hot chocolate even "greater!" Momma
