Eggnog Cookies


I found this recipe in the December issue of People mags StyleWatch. The recipe comes from Lauren Conrad's mom....or L.C.'s mom (loved that Laguna Beach, did you?). They looked like the perfect cookie for this time of year, so I gave them a go. They turned out really good, exceeding my expectations by far. These would be a great neighbor gift or a lovely little party munch. Enjoy!

Recipe (yield 3 dozen):
2 1/4 cup flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/4 cup sugar
3/4 cup salted butter, softened
1/2 cup eggnog
1 tsp. vanilla extract
2 large egg yolks

Preheat oven to 300 degrees F. In a medium bowl, combine flour, baking powder, cinnamon, and nutmeg. Mix well with a wire whisk. Set aside. In a large bowl, cream sugar and butter. Add eggnog, vanilla and egg yolks. Mix until smooth. Add the flour mixture to the eggnog mixture. Mix until just combined. Do not overmix. Drop in rounded 1/2 teaspoonfuls onto ungreased cookie sheets, 1 inch apart. Sprinkle tops lightly with nutmeg. Bake for 10-15 minutes or until bottoms turn light brown. Remove from oven and transfer cookies to a flat surface to cool.

DAng! I wanna make those and yes I was a sucker for Laguna Beach and The Hiils!
